Origins:   Desi Kitchen Jaggry (Gur) is derived from sugar cane juice and is processed in the Northern part of India. After sugar cane has been crushed to produce cane juice, the liquid is boiled down and reduced to make the golden color jaggery. The best quality jaggery is produced between the months of October to December, which make it a seasonal item and is only available in the first few months of a new year.  It is a traditional sweetener used predominantly in South Asia. The flavor profile changes according to the color of the jaggery. A very light golden brown jaggery will yield a fruiter, honey flavor as opposed to the darker variety that has a molasses and caramel undertone.  


Culinary Uses:   Jaggery is used in both savory and sweet dishes.  Confectionaries similar to peanut brittle are made from a mixture of jaggery and various nuts, seeds, dried fruits called chikki.  Used predominate in Guajarati Cuisine, it is added to soupy lentil dishes as well as dry vegetable sautés.  Many chai tea drinkers also prefer adding jaggery to their tea instead of refined white sugar. 


Medicinal Uses:   Jaggery contains more nutrients than many other sweeteners such as zine, potassium, magnesium, iron and is loaded with antioxidants. It is known to aid in digestion.
