Origins:    Native to the India and Persia, Ajwain is the fruit-seed from Bishop' Weed, a bush like plant from the parsley family. The greyish-green seeds are small, with a powerful thyme-like flavor.  The spice is mostly used in Indian and North African cooking. 


Culinary Uses:   Ajwain has a particular affinity to starchy foods like savory pastries and breads.  Naan breads, Paronthas, and savory fried snacks benefit from the seeds pungent flavor.  Also used extensively in Ethiopian Cuisine, it is added to vegetable and lentil dishes.


Medicinal Uses:    The seeds contain an essential oil which is about 50% thymol which is a strong germicide, anti-spasmodic and fungicide.  Used in home remedies to relive diarrhea ,  colic, indigestion and flatulence, the seeds can be chewed or seeped in hot water.
